A Patient Craft

North Maple Honey Co. began in the 1990s as a family devotion to the bees and the land. Today we carry that same patience into every jar — honey gathered slowly, never rushed, never processed.

We keep our honey exactly as the hive intended: raw, living, and full of character. From the meadows of Ontario to traditional Karakovan comb, every harvest honours the work of the bees.

The purest form of honey. In Karakovan beekeeping, the bees build their own comb entirely from scratch — no frames, no foundation, no added wax. Every cell is made by the bees themselves. The result is honey in its most natural, untouched state.

Room Temperature

Store at room temperature, ideally between 18–24°C, for the best texture and flavour.

Never Refrigerate

Cold speeds up crystallization and dulls the aroma. The cupboard is honey's best friend.

Keep It Sealed

Honey draws in moisture from the air. Always close the lid tightly after every use.

Dry Spoon Only

Use a clean, dry spoon. Water and crumbs are the only things that can spoil pure honey.

Keep jars out of direct sunlight to preserve the delicate enzymes and natural colour.

Crystallization Is Natural

If your honey turns grainy or solid, it's a sign it's raw and pure. Warm the jar gently in water to return it to liquid.
